Flavors are chemical substances, not consumed as such, which are introduced into food to give it a particular taste or smell.
- Natural (of plant, animal or microbiological origin) or synthetic flavourings and flavouring substances are not consumed as such, but are introduced into foods to give them a particular smell and/or taste.
- Their use must be indicated in the list of ingredients of the foodstuffs concerned.
- To qualify as “natural”, the flavoring agents used must be entirely of natural origin. For example, if the source of the flavouring is mentioned, at least 95% of the flavouring part must be obtained from the base material in question, such as cocoa flavouring.
- Flavors are subject to regulatory harmonization at European level under regulation CE/1331/2008. Before being authorized by the European Commission, flavors are subject to evaluation by the European Food Safety Authority (EFSA).
- Regulation (EC) no. 1334/2008 lays down the conditions for the use of flavourings, specifying which flavourings and substances are prohibited, the maximum doses that can be used for certain flavourings, and the labelling rules applicable at European level.
